Chinese cabbage — also called Napa cabbage or Chinese leaf — forms a large, elongated, crisp head with crinkled pale-green leaves and a mild, delicate flavour. Excellent raw in salads, in stir-fries, and for kimchi. Fast-growing but prone to bolting in spring.
