Most commonly seen as a large purple pear shaped fruit, with a smooth but spongy feel to the skin. Small green varieties are used I Thai cooking, especially in Green Curry. Older varieties required soaking in salted water before cooking to remove any bitterness.

Aubergine Growing Notes

Sowing

Sow and plant in a similar manner to Tomatoes. Ideal environment is in a greenhouse. Plant out in larger pots or 50cm apart in beds.

Pruning & Thining

Supports may be required. Pinch out the tips like Tomatoes.

Harvesting

Harvest when the fruits change colour, and swell to a reasonable size.
